Soul Enchilada Casserole

Soul Patty mix1 bag
Grated Carrots1 cups
Chopped green onions3/4 cup
Chopped cilantro leaves1/2 cup
Scrambled Eggs your choice (Optional)6 ea. eggs
Boiling water or Vegetable stock3 1/2 cups
6" corn tortillas6 ea.
Enchilada sauce (we use red and green)14 oz.
Daiya Mexican cheese (Vegan) or regular cheese16 oz.
Avocado for garnish1 ea.
How to prepare and cook
1- Add the mix, and vegetables to a large mixing bowl and mix well to coat all and eliminate any clumping.
2- When the water or (Vegetable Stock) comes to a rapid boil, add to dry mix and stir well using a stiff wooden or stainless spoon.  Mix until all dry mix is absorbed and it becomes like cookie dough
3- Cover the bowl with plastic wrap and allow to stand for a minimum of 20 minute.  Cook the soul patty mix in a pan with oil crisping it well and crumbling it while cooking to resemble sausage.  Reserve.
4- Begin with a 6" x 9" shallow casserole dish and spread 1/2 cup of the enchilada sauce on bottom.  Then lay out three tortillas over top of it.  Sprinkle with 1 1/2 cups of Soul Crumbles then 1 cup of cheese.  Repeat this step until all tortillas are used.
5- Top the last layer with 1/2 cup enchilada sauce, and 1 cup cheese.  Bake in a 375 deg. F. oven for about 25 minutes.  Remove and allow to sit 5 minutes before cutting.
6- Cut into serving pieces like lasagna.  Top with some sauce, and sliced avocado.
7: Note: optional is the eggs for a breakfast casserole.  Scramble eggs and add on top of the Soul Crumble before adding the cheese nad tortilla layer.  This is a great way to make a casserole for breakfast that can be brought to a brunch pot luck or family gathering.  Use vegan eggs to keep it vegetarian.
