Soul Patty Tater Tots

Soul Patty mix1 bag
Grated Carrots1 cups
Chopped green onions3/4 cup
Chopped cilantro leaves1/2 cup
Simply Shredded potatoes1 1/2 cups
Boiling water or Vegetable stock3 1/2 cups
How to prepare and cook
1- Add the mix, vegetables and potatoes to a large mixing bowl and mix well to coat all and eliminate any clumping.
2- When the water or (Vegetable Stock) comes to a rapid boil, add to dry mix and stir well using a stiff wooden or stainless spoon.  Mix until all dry mix is absorbed and it becomes like cookie dough
3- Cover the bowl with plastic wrap and allow to stand for a minimum of 20 minute.
4- To prepare tots, use a soup spoon or measuring spoon and scoop out quarter size dollops, form them into any shape you like, place on a pan and allow to chill in refrigerator for about 1 hour prior to frying.
5- Heat 2 cups of oil in a small sauce pot so the oil is at least 2" deep.  Heat oil to 350 deg. F. 
6- Place tots in oil carefully one at a time and allow to cook 1 1/2 minutes approximately or until golden brown and crisp.  Remove from oil and allow to drain on paper towels.
